RollinGreens plant-based snacks: Millet Tots and Cauliflower Wings
Please introduce yourself and your startup RollingGreens to our readers!
My name is Lindsey Cunningham, and I am Co-Founder and CEO of RollinGreens. RollinGreens is a Boulder Based company, specializing in tasty, plant-based snacks made from clean, whole, real ingredients. Our current varieties include Millet Tots and Cauliflower Wings.
How did you get the idea of RollingGreens?
RollinGreens originated in 1980 by the Cunningham family, as Boulder’s first organic food truck. In 2011, youngest son Ryan Cunningham AKA “Chef Ko” and his wife Lindsey, revitalized the food truck. In 2016, they took their very popular appetizer Millet Tots, and launched into retailers nationwide. Today the company is in over 2,500 stores, online direct at RollinGreens.com, a regular on QVC, and aired on Shark Tank in May 2020.
Why did you decide to start with RollingGreens?
Chef Ko and Lindsey set out to open a restaurant in late 2010, with the food truck craze on the rise, they switched gears and decided to launch with a food truck. As they were building their food truck, they learned of their family history. It was fate!
What is the vision behind RollingGreens?
To create Chef-led, plant-based products, made from real, whole simple ingredients. All ingredients you know, love and trust.
How difficult was the start and which challenges you had to overcome?
When we first began, everything worked together. It was really meant to be. We had a co-packer who took us on pre-revenue, an ad agency that believed in us and helped us get started and more. Everyone pitched in to get our Millet Tots off the ground and make it a success. As we grew, capital became a challenge and scale. We continue to build on those two initiatives.
Who is your target audience?
Young families who are conscious consumers, care about the food they put in their bodies without sacrificing taste
Can you describe your typical workday?
Working 12 hour days everyday. There is no down time for hard working entrepreneurs. It’s our life.
Where do you see yourself and your startup RollingGreens in five years?
30 products across 30,000 retailers, a booming e-commerce business, and really focusing on our give-back model. We want to be a small source in helping to change and better our food system.
What 3 tips would you give to founders?
Do this because you love it, not because you think you will make money doing it, stay persistent-a squeaky door gets fixed, Always ask the why, and stay curious. If we stopped after every no, we wouldn’t be in business today.
